Zero-Waste Grapefruit Negroni Popsicles

The creators of Hong Kong’s popular food rescue app are experts at reducing food waste and will be sharing a cocktail recipe with us every other Friday, which utilises some of the most common (and possibly, expiring) items in your pantry.

Check out the perfect way to use up any leftover grapefruit and orange juice in this Grapefruit Negroni Popsicle recipe!


ZERO WASTE GRAPEFRUIT NEGRONI POPSICLE

INGREDIENTS / MAKES 8

  • Leftover grapefruit juice – 2 cups
  • Leftover orange juice – 1 cup
  • Simple syrup – ¼ cup
  • Gin – 1/3 cup
  • Sweet vermouth – 3 tbsp
  • Campari – 1/3 cup
  • Orange slices.

INSTRUCTIONS

  1. Combine all the ingredients in a pitcher and stir.
  2. Pour the mix into popsicle moulds, leaving some air at the top for the popsicle to expand, and add in an orange slice.
  3. Secure the top and freeze.
  4. Leave it overnight, pop it out and enjoy!
